High-Protein Creamy Fruit Salad

Ingredients

  • 2 cups red grapes, halved
  • 2 cups strawberries, sliced
  • 1 cup plain Greek yogurt
  • 1 cup cottage cheese
  • ¼ cup unsweetened shredded coconut
  • 2 tablespoons chia seeds
  • ½ cup chopped nuts (pecans, walnuts, or almonds)
  • 1 tablespoon honey or sugar-free sweetener (optional)
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 1 tablespoon fresh mint, finely chopped (optional)
  • ½ teaspoon cinnamon (optional)

Instructions

  1. Make the creamy base
    • In a large bowl, whisk together the Greek yogurt, cottage cheese, vanilla extract, lemon juice, and honey until smooth.
  2. Add the mix-ins
    • Stir in the shredded coconut, chia seeds, chopped nuts, mint, and cinnamon.
  3. Fold in the fruit
    • Gently add the grapes and strawberries and mix until evenly coated.
  4. Chill
    • Refrigerate for 30–60 minutes before serving to allow the flavors to blend and the chia seeds to thicken the dressing.

For Even More Protein

Increase the protein content by:

  • Adding 1 scoop vanilla protein powder to the yogurt mixture.
  • Using all Greek yogurt and omitting some of the fruit.
  • Adding extra cottage cheese.
