
High-Protein Creamy Fruit Salad

Ingredients
- 2 cups red grapes, halved
- 2 cups strawberries, sliced
- 1 cup plain Greek yogurt
- 1 cup cottage cheese
- ¼ cup unsweetened shredded coconut
- 2 tablespoons chia seeds
- ½ cup chopped nuts (pecans, walnuts, or almonds)
- 1 tablespoon honey or sugar-free sweetener (optional)
- 1 tablespoon lemon juice
- 1 teaspoon vanilla extract
- 1 tablespoon fresh mint, finely chopped (optional)
- ½ teaspoon cinnamon (optional)
Instructions
- Make the creamy base
- In a large bowl, whisk together the Greek yogurt, cottage cheese, vanilla extract, lemon juice, and honey until smooth.
- Add the mix-ins
- Stir in the shredded coconut, chia seeds, chopped nuts, mint, and cinnamon.
- Fold in the fruit
- Gently add the grapes and strawberries and mix until evenly coated.
- Chill
- Refrigerate for 30–60 minutes before serving to allow the flavors to blend and the chia seeds to thicken the dressing.

Increase the protein content by:
