High-Protein Chocolate Caramel Cookies

Ingredients

Dry Ingredients

  • 1 cup oat flour
  • ½ cup chocolate protein powder
  • 2 tbsp cocoa powder
  • ½ tsp baking soda
  • Pinch of salt

Wet Ingredients

  • ⅓ cup natural peanut butter or almond butter
  • ¼ cup maple syrup or honey
  • 1 egg
  • 2 tbsp milk
  • 1 tsp vanilla extract

Filling & Mix-Ins

  • 10–12 soft caramel candies or protein caramel pieces
  • ¼ cup dark chocolate chips

Instructions

  1. Preheat oven
    • Set oven to 350°F (175°C).
    • Line a baking tray with parchment paper.
  2. Make the dough
    • Mix dry ingredients in one bowl.
    • In another bowl whisk peanut butter, maple syrup, egg, milk, and vanilla.
    • Combine wet and dry mixtures until a thick dough forms.
    • Fold in chocolate chips.
  3. Fill the cookies
    • Scoop dough balls onto tray.
    • Press a caramel into the center of each.
    • Cover caramel completely with dough.
  4. Bake
    • Bake 8–10 minutes.
    • Cookies should look slightly soft in the middle.
  5. Cool
    • Let rest 10 minutes so the caramel sets slightly.

  • Use casein/whey blend protein powder for softer texture
  • Add 2 tbsp powdered peanut butter
  • Replace caramel candies with high-protein caramel spread
  • Mix in chopped nuts for extra protein and crunch
