Herbed Quinoa Flatbread with a Protein Boost

Ingredients:

– 1 cup cooked quinoa

– 1/2 cup chickpea flour

1/2 cup water

– 1/4 cup chopped fresh cilantro

– 1/4 cup chopped fresh parsley

– 1 teaspoon ground cumin

– 1/2 teaspoon garlic powder

– 1/2 teaspoon sea salt

– 1/4 teaspoon black pepper

– 1 tablespoon olive oil

Directions:

1. In a bowl, combine the cooked quinoa, chickpea flour, water, cilantro, parsley, cumin, garlic powder, sea salt, and black pepper. Stir until everything is well blended.

2. Heat the olive oil in a non-stick skillet over medium heat.

3. Pour a ladleful of the batter into the skillet and spread it out into a thin circle.

4. Cook for about 3-4 minutes on each side, or until golden brown and crispy.

5. Continue this process with the remaining batter.

6. Serve warm, either on its own or with your favorite dip!
