Healthy Cucumber Salad Recipe
Ingredients:
- 2 large cucumbers
- 1 small red onion (optional)
- 1 cup cherry tomatoes (optional)
- 1/4 cup fresh dill or parsley (chopped)
- 2 tablespoons extra-virgin olive oil
- 1 tablespoon red wine vinegar or apple cider vinegar
- 1 teaspoon honey or maple syrup (optional)
- Salt and pepper to taste
Instructions:
- Prepare the Cucumbers: Wash and peel the cucumbers. Slice them thinly (you can use a mandolin for even slices). If you prefer, you can also cut them into half-moons or dice them.
- Prepare the Onion (if using): Peel and thinly slice the red onion.
- Combine Ingredients: In a large bowl, combine the cucumber slices, cherry tomatoes (if using), and red onion.
- Make the Dressing: In a small bowl, whisk together the olive oil, vinegar, honey (if using), salt, and pepper.
- Toss and Serve: Pour the dressing over the cucumber mixture and toss to coat. Sprinkle with fresh dill or parsley.
- Chill (Optional): For best flavor, let the salad sit in the refrigerator for at least 15 minutes before serving to allow the flavors to meld.
