Hamburger Soup

Ingredients  

  • 2 Tbsp olive oil
  • 1 medium onion finely diced
  • 1 large carrot peeled and thinly sliced
  • 4 sticks celery thinly sliced
  • 1 1/2 lb lean ground beef 85% or leaner
  • 2 Tbsp tomato paste
  • 3 cloves garlic minced
  • 28 oz canned diced tomatoes
  • 8 cups beef broth
  • 2 large potatoes peeled and chopped
  • 1 tsp Italian seasoning
  • 1 1/2 tsp salt or to taste
  • 1/4 tsp ground black pepper or to taste
  • 3 Tbsp fresh parsley chopped for garnish

Instructions 

  • Start with Sauté: Heat your pot over medium with 2 Tbsp olive oil. Toss in onion, carrot, and celery slices, cooking until they soften.
  • Cook the Beef: Add the lean ground beef to the pot, crumbling it as it cooks until it achieves a golden hue.
  • Combine Ingredients: Mix in the diced tomatoes, garlic, tomato paste, chopped potatoes, and beef broth to the pot. Flavor with Italian seasoning, salt, and pepper to taste.
  • Let it Simmer: Bring your soup to a boiling point, then reduce the heat allowing it to simmer for about 30 minutes, or until the potatoes are soft. Adjust seasoning as needed and garnish with parsley before serving.

This Hamburger Soup stores beautifully in the refrigerator or freezer, making it a fantastic make-ahead meal. For refrigeration, allow the soup to cool completely before transferring it to an airtight container. It can be stored in the fridge for up to 3-4 days. To freeze, pour the cooled soup into freezer-safe bags or containers, leaving some space for expansion. Frozen, the soup can be enjoyed for up to 3 months. Thaw overnight in the refrigerator and reheat gently on the stove, adding a little water or broth if necessary to adjust the consistency.
