Guilt-free fruit cheesecake made with Skyr – a light, creamy, and protein-packed dessert!

📝 Ingredients:

▪️ 400g of natural skyra

▪️ 3 eggs

▪️ 1⁄2 cup erythritol or sugar

▪️ 1 pack of vanilla pudding (approx. 40 g)

▪️ 1 teaspoon of vanilla extract

▪️ 1 tablespoon of potato flour (optional)

▪️ 1 cup of fruit (cherries, apricots, peaches or others)

👩 🍳 The preparation:

1️⃣ Mix skyr, eggs, erythritol, pudding, vanilla and flour.

2️⃣ Mix briefly to combine the ingredients.

3️⃣ Pour the mass into a 20×25 cm form.

4️⃣ Arrange the fruit on top and press it slightly.

5️⃣ Bake 35-40 minutes at 180°C.

6️⃣ Refrigerate and chill for a minimum of 2 hours.
