Ingredients
For the Chicken: 1 lb chicken breast (sliced into strips), 2 tbsp olive oil, 1 tbsp lemon juice, 2 cloves minced garlic, 1 tsp dried oregano, ½ tsp paprika, salt, and black pepper.
For the Tzatziki Sauce: 1 cup Greek yogurt, ½ English cucumber (grated and squeezed dry), 1 tbsp fresh dill (chopped), 1 clove minced garlic, 1 tsp lemon juice, salt.
For Assembly: 4 warm pita or flatbreads, 1 sliced cucumber, 1 cup cherry tomatoes (halved), 1 sliced red onion, 1 yellow bell pepper (sliced).
Instructions
Marinate the Chicken: In a bowl, whisk together olive oil, lemon juice, minced garlic, oregano, paprika, salt, and pepper. Toss the chicken strips in the marinade until evenly coated. Cover and refrigerate for at least 30 minutes.
Make the Tzatziki: While the chicken marinates, combine the Greek yogurt, squeezed grated cucumber, fresh dill, minced garlic, and lemon juice in a small bowl. Season with a pinch of salt, mix well, and chill.
Grill the Chicken: Heat a grill pan or outdoor grill over medium-high heat. Grill the chicken strips for about 4–5 minutes per side, or until they develop a beautiful, deep char and are cooked through to an internal temperature of 165°F (74°C). Remove and let rest for a few minutes.
Assemble: Lightly toast your pitas. Lay a warm pita flat, then layer on the fresh cucumber slices, tomatoes, red onion, and yellow bell peppers. Arrange the juicy, charred grilled chicken strips down the center.
Finish: Smother generously with the chilled tzatziki sauce, garnish with a sprinkle of extra fresh dill, roll it up tightly, and enjoy!
