A fresh, colorful, and healthy appetizer featuring crisp cucumber, creamy feta cheese, juicy tomatoes, and a simple Greek-inspired dressing.

Ingredients

For the Skewers

1 large English cucumber, sliced into thick rounds

200 g (7 oz) feta cheese, cut into 1-inch cubes

12 cherry tomatoes

12 pitted Kalamata olives

12 small wooden skewers or cocktail picks

For the Greek Dressing

2 tbsp extra-virgin olive oil

1 tbsp fresh lemon juice

½ tsp dried oregano

¼ tsp garlic powder

¼ tsp salt

¼ tsp black pepper

Garnish

Extra dried oregano

Fresh parsley, chopped (optional)

Instructions

Step 1: Make the Dressing

In a small bowl, whisk together:

Olive oil

Lemon juice

Oregano

Garlic powder

Salt

Black pepper

Set aside.

Step 2: Assemble the Skewers

On each skewer, thread:

One cucumber slice

One cube of feta cheese

One Kalamata olive

One cherry tomato

Repeat until all skewers are assembled.

Step 3: Season

Arrange the skewers on a serving platter.

Drizzle with the Greek dressing.

Sprinkle with extra oregano and parsley if desired.

Step 4: Serve

Serve immediately, or refrigerate for up to 2 hours before serving.
