*Ingredients*
*For Burgers:*
– *600g chicken qeema* – boneless breast minced, not too lean
– *1/2 cup feta cheese*, crumbled – or white kachra cheese / pizza cheese
– *1 small red onion*, finely chopped
– *2 tbsp fresh parsley*, chopped – or dhaniya
– *1 tbsp fresh dill*, chopped – or 1 tsp dry dill
– *2 garlic cloves*, minced
– *1 tsp dried oregano*
– *1/2 tsp black pepper*
– *1/2 tsp salt* – less if feta is salty
– *1/4 tsp paprika*
– *2 tbsp olive oil* – for frying
– *1 tbsp lemon juice*
*Optional but makes it juicy like photo:*
– *2 tbsp breadcrumbs* + *1 tbsp yogurt* – keeps it soft
– *1 egg* – for binding, optional if qeema is sticky enough
*Instructions*
*1. Mix:*
1. In big bowl add chicken qeema, onion, garlic, parsley, dill, oregano, salt, pepper, paprika, lemon juice, breadcrumbs + yogurt.
2. Add crumbled feta LAST. Mix lightly with hands, don’t overmix or it will be tough.
*2. Shape:*
Divide into 6 equal balls, flatten into thick patties – about 1-inch thick. Make slight dimple in center with thumb (won’t puff up).
*3. Cook:*
1. Heat olive oil in non-stick pan on medium heat.
2. Cook 5-6 min per side until golden brown like photo and inside is fully white. Cover 2 min in between to cook through.
3. *Oven/Air fryer:* 200°C for 18 min, flip halfway.
*4. Serve:*
Stack like photo! Serve in burger bun with tzatziki, or with cucumber salad, or as is.
*Quick Tzatziki Sauce (Greek Sauce):*
Mix: 1/2 cup thick yogurt + 1/2 grated cucumber squeezed dry + 1 garlic minced + 1 tsp lemon + salt + dill.
