Good Ole Fashion Mac and Cheese

Ingredients:

  • 2 cups cauliflower florets (as the “mac”)
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup mozzarella cheese
  • 1/4 cup cream cheese
  • 1/2 cup heavy cream
  • 1 tsp Dijon mustard (optional, for a tangy kick)
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • Salt & pepper to taste
  • 2 tbsp butter
  • 1/4 cup grated Parmesan cheese (for topping)
  • Pork rinds crumbs (optional, for that crispy topping)

Instructions:

  1. Prep the Cauliflower:
    Cut cauliflower into small, bite-sized florets. Boil or steam until tender but not mushy (about 5-7 minutes). Drain well and pat dry with paper towels to remove excess moisture.
  2. Make the Cheese Sauce:
    In a saucepan over medium heat, melt the butter. Add heavy cream, cream cheese, garlic powder, onion powder, and Dijon mustard. Stir until smooth.
  3. Get Cheesy:
    Slowly add in the cheddar and mozzarella cheese, stirring constantly until fully melted and creamy. Season with salt and pepper to taste.
  4. Mix It Up:
    Add the cauliflower florets into the cheese sauce, stirring to coat every piece.
  5. Bake It (Optional for Crispy Top):
    Pour the mixture into a baking dish. Sprinkle Parmesan cheese and crushed pork rinds on top for a crunchy finish. Broil for 2-3 minutes until golden and bubbly.
  6. Serve & Enjoy:
    Let it cool slightly, then dig in!
