German Potato Pancakes

Ingredients

Potatoes: 4-5 medium-sized, peeled and grated

Onion: 1 medium-sized, finely chopped or grated

Eggs: 2, beaten

Flour: 2-4 tablespoons, depending on the moisture of the potatoes

Salt and Pepper: to taste

Oil: for frying

Instructions

Prepare the Mixture:

After grating the potatoes, squeeze out as much liquid as possible. This helps to get a crispier pancake.

In a large bowl, mix the grated potatoes, onion, eggs, flour, salt, and pepper until well combined.

Heat the Oil:

In a large skillet, heat a generous amount of oil over medium heat. The oil should be about a quarter-inch deep.

Form and Fry the Pancakes:

Take a scoop of the potato mixture and form it into a patty. Carefully place it in the hot oil.

Flatten the patty slightly with a spatula. Fry until the underside is golden brown, then flip and cook the other side. Each side should take about 3-5 minutes.

Serve:

Remove the pancakes from the skillet and drain on paper towels to remove excess oil.

Serve hot, traditionally with applesauce or sour cream.
