Garlic Butter Steak Bites with Zucchini Noodles

Ingredients:

  • For the Steak Bites:
    • 1 lb sirloin steak, cut into bite-sized cubes
    • 2 tbsp olive oil or butter
    • 4 garlic cloves, minced
    • 1 tbsp fresh rosemary or thyme (optional)
    • Salt and pepper to taste
  • For the Zucchini Noodles:
    • 2 large zucchinis, spiralized into noodles
    • 1 tbsp olive oil or butter
    • Salt and pepper to taste
  • For the Garlic Butter Sauce:
    • 4 tbsp unsalted butter
    • 3 garlic cloves, minced
    • 1 tsp fresh parsley, chopped (optional)
    • 1 tbsp lemon juice (optional, for a fresh zing)

Instructions:

  1. Prepare the Steak Bites:
    • Heat olive oil or butter in a large skillet over medium-high heat.
    • Season the steak cubes with salt and pepper.
    • Add the steak bites to the hot skillet and cook for 3-4 minutes until they are browned and cooked to your preferred level of doneness.
    • Add the minced garlic and herbs (if using), cook for another 1-2 minutes, and remove from heat.
  2. Make the Zucchini Noodles:
    • While the steak is cooking, heat another tablespoon of olive oil or butter in a separate skillet over medium heat.
    • Add the zucchini noodles, season with salt and pepper, and sauté for about 2-3 minutes until they are tender but still have a bit of crunch.
  3. Make the Garlic Butter Sauce:
    • In the same skillet you used to cook the steak, melt the butter over medium heat.
    • Add the minced garlic and cook for 1-2 minutes until fragrant. If using, add lemon juice for a fresh, zesty flavor.
    • Toss the cooked steak bites in the garlic butter sauce and mix to coat.
  4. Serve:
    • Serve the garlic butter steak bites over the zucchini noodles, drizzling with any extra garlic butter sauce from the skillet.
    • Garnish with fresh parsley, and enjoy!
