Garlic Butter Steak Bites with Zucchini Noodles
Ingredients:
- For the Steak Bites:
- 1 lb sirloin steak, cut into bite-sized cubes
- 2 tbsp olive oil or butter
- 4 garlic cloves, minced
- 1 tbsp fresh rosemary or thyme (optional)
- Salt and pepper to taste
- For the Zucchini Noodles:
- 2 large zucchinis, spiralized into noodles
- 1 tbsp olive oil or butter
- Salt and pepper to taste
- For the Garlic Butter Sauce:
- 4 tbsp unsalted butter
- 3 garlic cloves, minced
- 1 tsp fresh parsley, chopped (optional)
- 1 tbsp lemon juice (optional, for a fresh zing)
Instructions:
- Prepare the Steak Bites:
- Heat olive oil or butter in a large skillet over medium-high heat.
- Season the steak cubes with salt and pepper.
- Add the steak bites to the hot skillet and cook for 3-4 minutes until they are browned and cooked to your preferred level of doneness.
- Add the minced garlic and herbs (if using), cook for another 1-2 minutes, and remove from heat.
- Make the Zucchini Noodles:
- While the steak is cooking, heat another tablespoon of olive oil or butter in a separate skillet over medium heat.
- Add the zucchini noodles, season with salt and pepper, and sauté for about 2-3 minutes until they are tender but still have a bit of crunch.
- Make the Garlic Butter Sauce:
- In the same skillet you used to cook the steak, melt the butter over medium heat.
- Add the minced garlic and cook for 1-2 minutes until fragrant. If using, add lemon juice for a fresh, zesty flavor.
- Toss the cooked steak bites in the garlic butter sauce and mix to coat.
- Serve:
- Serve the garlic butter steak bites over the zucchini noodles, drizzling with any extra garlic butter sauce from the skillet.
- Garnish with fresh parsley, and enjoy!
