  • 500g (1 lb) sirloin steak (or ribeye), cut into bite-sized cubes
  • Salt and pepper, to taste
  • 1 tbsp olive oil

  • 4 cloves garlic, minced
  • 2 tbsp fresh chopped parsley
  • Optional: pinch of chili flakes or a squeeze of lemon

๐Ÿ”น 1. Cook the Potatoes

  1. Bring a pot of salted water to a boil and cook the halved baby potatoes for 6โ€“8 minutes until just fork-tender. Drain and pat dry.
  2. In a large skillet, heat 1 tbsp olive oil over medium-high heat.
  3. Add the potatoes cut-side down. Cook 5โ€“7 minutes, flipping occasionally, until golden brown and crispy.
  4. Season with salt and pepper. Remove from the skillet and set aside.

  1. Pat the steak cubes dry with paper towels (helps with searing).
  2. Season generously with salt and pepper.
  3. In the same skillet, heat 1 tbsp olive oil over high heat.
  4. Add steak bites in a single layer (work in batches if needed). Sear for about 1โ€“2 minutes per side, until browned but still tender inside.
  5. Remove steak from skillet and set aside with the potatoes.

  1. Lower heat to medium.
  2. Add 3 tbsp butter to the same skillet and let it melt.
