Diabetic-Friendly Garlic Butter Lobster & Scallops
Ingredients
- 1 lobster tail (or lobster meat)
- 6–8 sea scallops
- 2 tbsp butter (or mix half butter, half olive oil)
- 3–4 cloves garlic, minced
- 1 tbsp olive oil
- 1 tbsp lemon juice
- Salt & pepper
- Fresh parsley
- Optional: pinch of chili flakes or paprika
Instructions
- Pat scallops dry (this helps them sear properly).
- Heat olive oil in a pan over medium-high heat. Sear scallops 1.5–2 minutes per side until golden. Remove and set aside.
- In the same pan, add butter and garlic. Cook 30–60 seconds until fragrant (don’t burn the garlic).
- Add lobster meat and warm through gently (2–3 minutes depending on size).
- Return scallops to the pan, add lemon juice, salt, pepper, and herbs.
- Spoon garlic butter over everything and serve immediately.
