Ingredients
- 1 scoop (30–35 g) vanilla protein powder
- ¾ cup (180 g) plain Greek yogurt, preferably cold
- ½ cup (120 ml) unsweetened almond milk or any milk of choice
- 1–2 cups ice cubes
- 1 tablespoon sugar-free vanilla pudding mix (optional, for extra thickness)
- ½ teaspoon vanilla extract
- 1–2 teaspoons zero-calorie sweetener, to taste
- A tiny pinch of salt
- ¼ teaspoon xanthan gum (optional, but helps create a thicker, fluffier texture)
Optional flavor additions
- ½ cup frozen strawberries or mixed berries
- 1 tablespoon unsweetened cocoa powder for chocolate fluff
- 1 teaspoon instant coffee for a mocha version
- A few drops of butter or cake-flavored extract
Instructions
- Chill everything well.
For the thickest result, make sure the Greek yogurt and milk are very cold. You can even place the blender jar in the freezer for 10 minutes before starting. - Add the creamy ingredients.
Place the Greek yogurt, milk, vanilla extract, sweetener, and protein powder into a high-speed blender or food processor. - Add the thickening ingredients.
If using, add the sugar-free pudding mix and xanthan gum. Only a small amount of xanthan gum is needed—too much can make the mixture gummy. - Blend until smooth.
Blend for about 20–30 seconds, scraping down the sides if necessary. The mixture should be smooth and creamy. - Add the ice gradually.
Add the ice a little at a time while blending. Use the blender tamper if available. The mixture will become thicker and lighter as the ice is crushed. - Whip for maximum volume.
Continue blending for another 1–2 minutes. Stop once or twice to scrape down the sides. The fluff should look pale, thick, airy, and similar to soft-serve ice cream. - Adjust the texture.
If it is too thick for the blender to move, add milk 1 tablespoon at a time. If it is too soft, add a few more ice cubes or freeze it briefly. - Serve immediately.
Spoon the Frost-Bite Fluff into a chilled bowl or jar. Swirl the top with a spoon and enjoy right away for the lightest, fluffiest texture.

Freezer Tip
For a firmer, more scoopable texture, place the finished fluff in the freezer for 15–20 minutes. Avoid freezing it for several hours without stirring, as it may become very hard. If that happens, let it sit at room temperature for a few minutes and stir before eating
