Ingredients

  • 2 large cucumbers, sliced
  • 3 medium ripe tomatoes, chopped
  • ½ small red onion, thinly sliced
  • ¼ cup fresh parsley, chopped
  • 2 tablespoons fresh dill, chopped (optional)
  • 2 tablespoons extra-virgin olive oil
  • 1½ tablespoons lemon juice
  • 1 tablespoon red wine vinegar
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ teaspoon dried oregano

Instructions

  1. Prepare the vegetables: Wash the cucumbers and tomatoes thoroughly. Slice the cucumbers and chop the tomatoes into bite-sized pieces.
  2. Combine: Add the cucumbers, tomatoes, red onion, parsley, and dill to a large salad bowl.
  3. Make the dressing: In a small bowl, whisk together olive oil, lemon juice, red wine vinegar, salt, black pepper, and oregano.
  4. Dress the salad: Pour the dressing over the vegetables and gently toss until everything is evenly coated.
