Fluffy Chickpea Flour Herb Rolls

Ingredients:
- 1 cup chickpea flour (120g)
- 1 cup water (240ml)
- 1/4 cup chopped fresh herbs (rosemary, thyme, oregano) (10g)
- 2 tablespoons olive oil (30ml)
- 1 teaspoon baking powder
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Directions:
- Preheat oven to 400°F (200°C). Grease a muffin tin or line with muffin liners.
- In a large bowl, whisk together chickpea flour, baking powder, garlic powder, salt, and pepper.
- Gradually whisk in water until smooth batter forms. Stir in olive oil and chopped herbs.
- Pour batter into prepared muffin tin, filling each cup about 2/3 full.
- Bake for 20-25 minutes, or until golden brown and a toothpick inserted into the center comes out clean.
- Let cool in muffin tin for a few minutes before transferring to a wire rack to cool completely.
