Fluffy Chickpea Flour Herb Rolls

Ingredients:

  • 1 cup chickpea flour (120g)
  • 1 cup water (240ml)
  • 1/4 cup chopped fresh herbs (rosemary, thyme, oregano) (10g)
  • 2 tablespoons olive oil (30ml)
  • 1 teaspoon baking powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Directions:

  1. Preheat oven to 400°F (200°C). Grease a muffin tin or line with muffin liners.
  2. In a large bowl, whisk together chickpea flour, baking powder, garlic powder, salt, and pepper.
  3. Gradually whisk in water until smooth batter forms. Stir in olive oil and chopped herbs.
  4. Pour batter into prepared muffin tin, filling each cup about 2/3 full.
  5. Bake for 20-25 minutes, or until golden brown and a toothpick inserted into the center comes out clean.
  6. Let cool in muffin tin for a few minutes before transferring to a wire rack to cool completely.
