This Feta Chicken Salad is a fresh, protein-packed favorite loaded with juicy chicken, creamy feta cheese, crisp veggies, and a zesty homemade dressing. Ingredients

Salad

  • 2 cups cooked chicken breast diced or shredded (about 2 medium breasts)
  • 1 cup cherry tomatoes halved
  • 1 medium cucumber diced
  • ½ small red onion finely sliced
  • ½ cup feta cheese crumbled
  • ¼ cup black olives sliced (optional)
  • 2 cups romaine or mixed greens optional for extra volume

Dressing

  • 3 tbsp olive oil
  • 1 tbsp lemon juice fresh preferred
  • 1 tsp dried oregano
  • ½ tsp salt
  • ¼ tsp black pepper
  • ½ tsp garlic powder or 1 small fresh garlic clove, minced

Instructions

  • Prepare the Chicken
  • If not already cooked, season chicken lightly with salt and pepper.
  • Cook in a skillet over medium heat for 6–7 minutes per side until fully cooked.
  • Let cool slightly, then dice or shred.
  • Chop the Vegetables
  • Slice tomatoes in halves.
  • Dice cucumber into bite-sized pieces.
  • Thinly slice the red onion.
  • Slice olives if using.
  • Make the Dressing
  • In a small bowl, whisk together olive oil, lemon juice, oregano, salt, pepper, and garlic.
  • Taste and adjust seasoning if needed.
  • Assemble the Salad
  • In a large bowl, combine chicken, tomatoes, cucumber, onion, olives, and greens.
  • Sprinkle crumbled feta on top.
  • Toss & Serve
  • Drizzle dressing over the salad.
  • Toss gently until everything is coated.

Serve immediately or chill 30 minutes for enhanced flavor.
