Ingredients
Salad
- 2 cups cooked chicken breast diced or shredded (about 2 medium breasts)
- 1 cup cherry tomatoes halved
- 1 medium cucumber diced
- ½ small red onion finely sliced
- ½ cup feta cheese crumbled
- ¼ cup black olives sliced (optional)
- 2 cups romaine or mixed greens optional for extra volume
Dressing
- 3 tbsp olive oil
- 1 tbsp lemon juice fresh preferred
- 1 tsp dried oregano
- ½ tsp salt
- ¼ tsp black pepper
- ½ tsp garlic powder or 1 small fresh garlic clove, minced
Instructions
- Prepare the Chicken
- If not already cooked, season chicken lightly with salt and pepper.
- Cook in a skillet over medium heat for 6–7 minutes per side until fully cooked.
- Let cool slightly, then dice or shred.
- Chop the Vegetables
- Slice tomatoes in halves.
- Dice cucumber into bite-sized pieces.
- Thinly slice the red onion.
- Slice olives if using.
- Make the Dressing
- In a small bowl, whisk together olive oil, lemon juice, oregano, salt, pepper, and garlic.
- Taste and adjust seasoning if needed.
- Assemble the Salad
- In a large bowl, combine chicken, tomatoes, cucumber, onion, olives, and greens.
- Sprinkle crumbled feta on top.
- Toss & Serve
- Drizzle dressing over the salad.
