Famous La Scala Chopped Salad

SALAD BASE

INGREDIENTS

  • 2 cups iceberg lettuce, chopped
  • 1 baby cucumber, chopped
  • Sliced salami, chopped
  • 1/4 cup shredded mozzarella cheese
  • 1/2 cup chickpeas

ADD ONS

INGREDIENTS

  • 1/4 cup chopped sundried tomatoes
  • 1/4 cup chopped artichoke hearts
  • Diced chicken breast

DRESSING

INGREDIENTS

  • 2 tablespoons extra virgin olive oil
  • 1 1/2 tablespoons red wine vinegar
  • 2 teaspoons dijon mustard
  • Salt and pepper
  • 2 tablespoons grated pecorino romano (optional)

METHOD

  • STEP 1In a bowl add the lettuce, cucumber, salami and cheese.
  • STEP 2Whisk dressing ingredients together.
  • STEP 3Add chickpeas to a small bowl and top with ½ the dressing.
  • STEP 4Add remaining dressing to the salad and toss in a small bowl add the chickpeas and then pack in the salad.
  • STEP 5Flip the bowl over onto a plate and enjoy!
