Famous La Scala Chopped Salad
SALAD BASE
INGREDIENTS
- 2 cups iceberg lettuce, chopped
- 1 baby cucumber, chopped
- Sliced salami, chopped
- 1/4 cup shredded mozzarella cheese
- 1/2 cup chickpeas
ADD ONS
INGREDIENTS
- 1/4 cup chopped sundried tomatoes
- 1/4 cup chopped artichoke hearts
- Diced chicken breast
DRESSING
INGREDIENTS
- 2 tablespoons extra virgin olive oil
- 1 1/2 tablespoons red wine vinegar
- 2 teaspoons dijon mustard
- Salt and pepper
- 2 tablespoons grated pecorino romano (optional)
METHOD
- STEP 1In a bowl add the lettuce, cucumber, salami and cheese.
- STEP 2Whisk dressing ingredients together.
- STEP 3Add chickpeas to a small bowl and top with ½ the dressing.
- STEP 4Add remaining dressing to the salad and toss in a small bowl add the chickpeas and then pack in the salad.
- STEP 5Flip the bowl over onto a plate and enjoy!
