Egg Roll in a Bowl – WW Friendly

📝 Ingredients:
- 1 lb (450g) lean ground turkey or chicken (99% fat-free)
- 1 tbsp sesame oil (or olive oil spray for fewer points)
- 1 small onion, finely chopped
- 3 cloves garlic, minced
- 1 tbsp fresh ginger, grated
- 1 bag (14 oz) coleslaw mix (shredded cabbage & carrots)
- 2–3 tbsp low-sodium soy sauce (or coconut aminos)
- 1 tbsp rice vinegar (optional for extra zing)
- 1 tsp sriracha or chili garlic sauce (optional, for heat)
- Green onions and sesame seeds for garnish
👩🍳 Directions:
- Cook the protein:
In a large skillet, heat sesame oil over medium heat. Add ground turkey or chicken. Break it up and cook until no longer pink. - Add flavor:
Stir in onion, garlic, and ginger. Cook for 2–3 minutes until fragrant. - Toss in the veggies:
Add the coleslaw mix and soy sauce. Cook, stirring occasionally, for 5–7 minutes, or until the cabbage softens. - Finishing touches:
Stir in rice vinegar and sriracha if using. Taste and adjust seasoning. - Serve it up:
Top with green onions and a sprinkle of sesame seeds. Enjoy hot!
💡 Tips:
- Serve with a side of cauliflower rice to bulk it up!
