Egg Muffins
Ingredients:
– 6 large eggs
– 1/2 cup diced bell pepper
– 1/2 cup diced onion
– 1/2 cup cooked turkey bacon or turkey sausage (optional)
– 1/2 cup shredded cheese (optional)
– Salt and pepper to taste
– Olive oil or cooking spray for greasing the muffin tin
Directions:
1. Preheat your oven to 350°F (175°C).
2. Grease a muffin tin with olive oil or cooking spray.
3. In a large bowl, whisk together the eggs.
4. Stir in the diced bell pepper, onion, cooked turkey bacon or sausage, shredded cheese, salt, and pepper.
5. Pour the egg mixture evenly into the prepared muffin tin.
6. Bake for 18-20 minutes, or until the egg muffins are set and lightly golden.
7. Allow to cool slightly before removing from the muffin tin. Enjoy!
