Easy WW Cranberry Orange Bread

Ingredients:

2 cups all-purpose flour

1 tsp baking powder

½ tsp salt

1 cup granulated sugar

1 tbsp orange zest

½ cup buttermilk

½ cup canola oil

½ cup orange juice

2 large eggs

1 tsp vanilla extract

1 ½ cups fresh cranberries

For the Glaze:

1 cup powdered sugar

2 to 3 tbsp orange juice

Instructions:

Preheat oven to 350°F, grease a 9×5-inch loaf pan.

Whisk flour, baking powder, and salt. Set aside.

Mix sugar and orange zest in a separate bowl. Set aside.

In another bowl, whisk buttermilk, oil, orange juice, eggs, and vanilla. Add flour mixture and zest/sugar mix. Stir until just combined.

Gently fold in fresh cranberries.

Transfer batter to the greased loaf pan. Bake for 65-75 minutes.

For the glaze, whisk powdered sugar and orange juice until smooth and creamy.

Drizzle glaze over cooled bread, slice, and serve.

Glaze Tip:

Adjust orange juice for desired consistency.
