π₯ Ingredients (1 large serving or 2 smaller)
- 1 large chicken breast (diced)
- 1 pouch jasmine instant rice
- 1 bag broccoli stir-fry mix
- 2β3 tbsp teriyaki sauce (use low-sugar if possible)
Optional protein boost:
- 2β3 egg whites
- Extra chicken or tofu
π©βπ³ Instructions
1. Cook chicken
- Heat a non-stick pan with a little oil spray.
- Add diced chicken, cook on medium-high heat for 5β7 minutes until fully cooked.
- Lightly season with salt and pepper.
2. Add veggies
- Toss in the broccoli stir-fry mix.
- Stir-fry for 4β5 minutes until tender but still slightly crisp.
3. Add sauce
- Pour in teriyaki sauce.
- Stir everything together and cook for 2β3 minutes until coated and slightly sticky.
4. Optional protein boost
- Push everything to one side, add egg whites, scramble quickly, then mix in.
5. Prep rice
- Heat jasmine rice pouch according to instructions (usually 90 seconds).
6. Assemble tub
- Add rice to your container.
- Top with chicken teriyaki mix.
