Ingredients
- 8 egg roll wrappers
- 4 large eggs
- 1 cup shredded mozzarella cheese
- Β½ cup shredded cheddar cheese
- 2 tablespoons chopped green onions
- ΒΌ teaspoon salt
- ΒΌ teaspoon black pepper
- 1 tablespoon milk
- Vegetable oil, for frying

Instructions
- Prepare the eggs: In a bowl, whisk together the eggs, milk, salt, and black pepper.
- Scramble: Heat a lightly oiled skillet over medium heat. Add the eggs and gently scramble until just cooked. Remove from the heat.
- Add cheese: Stir the mozzarella, cheddar, and green onions into the warm scrambled eggs.
- Fill the wrappers: Place one egg roll wrapper on a clean surface with a corner facing you. Add about 2β3 tablespoons of the egg-and-cheese mixture near the center.
- Roll: Fold the bottom corner over the filling, fold in the sides, and roll tightly. Moisten the final corner with a little water to seal.
- Heat the oil: Heat about 1β2 inches of vegetable oil in a deep skillet to 350Β°F (175Β°C).
- Fry: Fry the egg rolls in small batches for 2β3 minutes per side, until crisp and golden brown.
- Drain: Transfer to a paper-towel-lined plate or wire rack to remove excess oil.
- Serve: Let cool for a few minutes and serve warm with your favorite dipping sauce.
