Ingredients

  • 4 tablespoons almond flour
  • 1 tablespoon coconut flour
  • 1 egg
  • 2 tablespoons butter, melted (or coconut oil)
  • 2 tablespoons erythritol or monk-fruit sweetener
  • ¼ teaspoon baking powder
  • ½ teaspoon vanilla extract
  • 1 tablespoon heavy cream (or almond milk)
  • Optional:
    • 1 tablespoon unsweetened cocoa powder (for chocolate cake)
    • Sugar-free chocolate chips or nuts

👩‍🍳 Instructions (Microwave)

  1. In a microwave-safe mug or bowl, add egg and whisk well.
  2. Add melted butter, cream, vanilla, and sweetener. Mix.
  3. Add almond flour, coconut flour, baking powder (and cocoa if using).
  4. Mix until smooth, no lumps.
  5. Microwave on HIGH for 90 seconds to 2 minutes
    (check at 90 sec — do not overcook).
