Diabetes-Friendly Pickled Beets
Ingredients
- 3–4 medium beets, cooked and sliced
- 1 cup apple cider vinegar
- ½ cup water
- 1–2 tbsp erythritol or monk fruit sweetener (adjust to taste)
- ½ tsp salt
- ½ tsp black peppercorns
- 2–3 whole cloves (optional)
- 1 small bay leaf
- Optional: sliced onion for extra flavor
Instructions
- Cook the beets
Boil or roast until tender, then peel and slice. - Make the brine
In a saucepan, combine vinegar, water, sweetener, salt, and spices. Heat until dissolved (no need to boil hard). - Jar it up
Place beets in a clean jar and pour the hot brine over them. - Cool & refrigerate
Let cool, then refrigerate at least 24 hours before eating (flavor improves after 2–3 days).
