Cucumbers With A Bang

ngredients:

  • 2 large cucumbers, thinly sliced
  • 1 tablespoon salt
  • 3 tablespoons rice vinegar
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon sugar
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • 1-2 teaspoons red pepper flakes (adjust to your spice preference)
  • 2 green onions, thinly sliced
  • 1 tablespoon sesame seeds, toasted
  • Fresh cilantro, chopped (optional)

Instructions:

  1. Prepare the Cucumbers:
    • In a large bowl, combine the cucumber slices with the salt. Let them sit for about 15-20 minutes to draw out excess moisture. Afterward, rinse the cucumbers thoroughly under cold water and pat them dry with a paper towel.
  2. Make the Dressing:
    • In a small bowl, whisk together the rice vinegar, soy sauce, sesame oil, sugar, minced garlic, grated ginger, and red pepper flakes until the sugar is dissolved and the mixture is well combined.
  3. Combine and Toss:
    • In a large bowl, combine the drained cucumber slices with the dressing. Toss to coat the cucumbers evenly.
  4. Add Garnishes:
    • Add the sliced green onions and toasted sesame seeds to the cucumbers and toss again. For extra freshness and flavor, sprinkle with chopped fresh cilantro if desired.
