Cucumber Salad
Ingredients:
- 2 large cucumbers
- 1 small red onion
- 1 cup cherry tomatoes (optional)
- 2 tablespoons fresh dill, chopped
- 1/4 cup white vinegar or apple cider vinegar
- 1 tablespoon olive oil
- 1 tablespoon sugar
- Salt and pepper to taste
Instructions:
- Prepare the Vegetables:
- Peel the cucumbers if desired. Slice them thinly.
- Slice the red onion thinly.
- Halve the cherry tomatoes if using.
- Combine the Vegetables:
- In a large bowl, combine the sliced cucumbers, red onion, and cherry tomatoes.
- Make the Dressing:
- In a small bowl, whisk together the vinegar, olive oil, sugar, salt, and pepper until the sugar is dissolved.
- Toss the Salad:
- Pour the dressing over the cucumber mixture and toss to coat evenly.
- Add the chopped dill and mix well.
- Chill and Serve:
- Cover and refrigerate for at least 30 minutes to let the flavors meld.
- Serve chilled, garnished with additional dill if desired.
