Ingredients:

  • 2 large cucumbers
  • 1 small red onion
  • 1 cup cherry tomatoes (optional)
  • 2 tablespoons fresh dill, chopped
  • 1/4 cup white vinegar or apple cider vinegar
  • 1 tablespoon olive oil
  • 1 tablespoon sugar
  • Salt and pepper to taste

Instructions:

  1. Prepare the Vegetables:
    • Peel the cucumbers if desired. Slice them thinly.
    • Slice the red onion thinly.
    • Halve the cherry tomatoes if using.
  2. Combine the Vegetables:
    • In a large bowl, combine the sliced cucumbers, red onion, and cherry tomatoes.
  3. Make the Dressing:
    • In a small bowl, whisk together the vinegar, olive oil, sugar, salt, and pepper until the sugar is dissolved.
  4. Toss the Salad:
    • Pour the dressing over the cucumber mixture and toss to coat evenly.
    • Add the chopped dill and mix well.
  5. Chill and Serve:
    • Cover and refrigerate for at least 30 minutes to let the flavors meld.
    • Serve chilled, garnished with additional dill if desired.
