You can make the pictured dish very low in carbohydrates, but it isn’t literally zero-carb because vegetables, tomato sauce, and dairy contain small amounts of carbs.

Ingredients

  • 1 lb ground beef or turkey
  • 1 tbsp olive oil
  • Β½ cup diced bell pepper
  • Β½ cup sliced mushrooms
  • Β½ cup diced zucchini
  • Β½ cup low-sugar/no-sugar-added pizza sauce
  • 1 cup shredded mozzarella cheese
  • Β½ cup shredded cheddar or provolone
  • ΒΌ cup sliced pepperoni, optional
  • 1 tsp Italian seasoning
  • Β½ tsp garlic powder
  • Salt and black pepper
  • Fresh parsley or basil, optional

Directions

  1. Heat oven to 400Β°F (200Β°C).
  2. Brown the ground meat in a skillet. Drain excess grease.
  3. Add bell pepper, mushrooms, and zucchini. Cook 3–5 minutes.
  4. Stir in pizza sauce, Italian seasoning, garlic powder, salt, and pepper.
  5. Divide mixture among 4 oven-safe bowls or one baking dish.
  6. Top with mozzarella and cheddar/provolone. Add pepperoni if desired.
  7. Bake 10–15 minutes, until the cheese is melted and browned.
  8. Garnish with parsley or basil.

For better blood-sugar control: choose a pizza sauce with no added sugar, keep the vegetable portion generous, and avoid adding bread, crackers, pasta, or a sugary drink.

Easy keto version: skip the zucchini and use more mushrooms, spinach, bell pepper, or olives. You can also replace some of the sauce with a small amount of crushed tomatoes plus Italian seasoning.
