Ingredients
- 1 lb (450 g) lean ground beef, turkey, or chicken
- 1 tbsp olive oil
- Β½ small onion, diced
- 1 bell pepper, diced
- 1 cup sliced mushrooms
- 1 cup no-sugar-added pizza or marinara sauce
- 1 tsp Italian seasoning
- Β½ tsp garlic powder
- ΒΌ tsp black pepper
- 1 cup shredded mozzarella cheese
- ΒΌ cup grated Parmesan
- Β½ cup sliced black olives, optional
- Β½ cup turkey pepperoni, chopped, optional
- Red pepper flakes, optional
Directions
- Brown the meat: Heat olive oil in a large skillet over medium heat. Add the ground meat and cook until browned and fully cooked. Drain excess fat if needed.
- Add onion, bell pepper, and mushrooms. Cook for 5β6 minutes, until the vegetables soften.
- Stir in pizza sauce, Italian seasoning, garlic powder, and black pepper. Simmer for 3β4 minutes.
- Divide the mixture among 4 oven-safe bowls or leave it in the skillet if oven-safe.
- Top with mozzarella, Parmesan, and optional turkey pepperoni or olives.
- Broil for 2β4 minutes, until the cheese is melted and lightly golden. Watch carefully.
- Let cool for a couple of minutes before serving.

- Choose no-sugar-added pizza sauce and check the label for carbohydrates.
- Use plenty of non-starchy vegetables such as mushrooms, peppers, spinach, zucchini, or broccoli.
- Choose lean meat and moderate the cheese/pepperoni if you’re watching saturated fat.
- For extra protein and fiber, serve with a small side salad.
- Avoid adding bread, regular pizza crust, or sugary sauces if you’re trying to keep the meal lower in carbohydrates.
