Crushed lentil soup with lemon and parsley

ingredients
Red Lentil curry
1.5-2 cups red lentils (or any color)
Greens (kale, collard, whatever)
Peas (canned or frozen)
1 small onion
Garlic to taste
1 tbs ginger
1 tbs curry powder
1 tsp cumin
1 tsp coriander
1 tsp Garam masala
1 can coconut milk
1 can diced tomatoes
1.5-3cups water (add as needed)
1.5 tsp salt
Sauté onion until softened. Add salt and sweat for a bit. Add garlic and ginger, then remaining spices until fragrant. Add tomatoes, stir. Add coconut milk, stir. Add lentils, stir. Add about 1.5 cups of water and bring to a boil, then knock down to a simmer. Stir occasionally and add more water as necessary to keep texture how you like it. Should be ready in about 15-20 mins.
