Ingredients:

  • 1 ½ cups almond flour
  • ¼ cup coconut flour
  • ½ teaspoon baking powder
  • ¼ teaspoon baking soda
  • ¼ teaspoon salt
  • ¼ cup unsalted butter (softened)
  • ¼ cup granulated erythritol (or another keto-friendly sweetener)
  • ¼ cup brown erythritol or keto brown sugar substitute
  • 1 large egg
  • 1 teaspoon vanilla extract
  • ½ cup sugar-free chocolate chips (or chopped keto chocolate)

Instructions:

  1. Preheat Oven: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat.
  2. Mix Dry Ingredients: In a medium bowl, whisk together almond flour, coconut flour, baking powder, baking soda, and salt.
  3. Cream Butter and Sweeteners: In a large bowl, use an electric mixer to beat the softened butter with the granulated erythritol and brown erythritol until light and fluffy.
  4. Add Egg and Vanilla: Beat in the egg and vanilla extract until well combined.
  5. Combine Mixtures: Gradually add the dry ingredients to the butter mixture, mixing until just combined. Stir in the sugar-free chocolate chips.
  6. Shape Cookies: Scoop dough in rounded tablespoons and place on the prepared baking sheet. Flatten them slightly with the back of a spoon or your fingers, as they won’t spread much during baking.
  7. Bake: Bake for 10-12 minutes, or until the edges are golden brown. The centers might look a bit soft, but they will firm up as they cool.
  8. Cool: Allow the cookies to cool on the baking sheet for about 5 minutes before transferring them to a wire rack to cool completely.
