Crispy Chicken Roast

This crispy  Chicken Roast is juicy, tender, spicy, and packed with incredible flavor. The  chicken is coated in a delicious blend of aromatic spices, ginger-garlic, mustard, chili sauce, lemon juice, and sesame seeds, then fried until perfectly golden and crispy. Serve it with fries, rice, or warm roti for a delicious and satisfying meal.

Ingredients

  • 800 g chicken
  • 1 tablespoon chili flakes
  • 2 tablespoons crushed coriander and cumin
  • 1 tablespoon salt
  • 1 tablespoon paprika
  • 1 teaspoon  garlic powder
  • 1 tablespoon coriander powder
  • 1 tablespoon cumin powder
  • 1 tablespoon ginger-garlic paste
  • 1 tablespoon lemon juice
  • 1 tablespoon mustard sauce
  • 2 tablespoons chili sauce
  • 3 tablespoons corn flour
  • 2 tablespoons sesame seeds
  • Oil, for deep frying

For Soaking the Chicken

  • ½ cup vinegar
  • 1 tablespoon salt
  • 1 tablespoon lemon juice
  • 5 cups water

For Serving

  • Chaat masala
  • Fresh lemon juice
  • French fries, rice, or roti

Instructions

1. Soak the Chicken

Add 5 cups of water, ½ cup vinegar, 1 tablespoon salt, and 1 tablespoon lemon juice to a large bowl. Add the chicken and let it soak for 30 minutes.

Drain the chicken thoroughly, rinse well, and pat dry with paper towels.

2. Season the Chicken

Add the chili flakes, crushed coriander and cumin, salt, paprika, garlic powder, coriander powder, cumin powder, ginger-garlic paste, lemon juice, mustard sauce, chili sauce, corn flour, and sesame seeds.

Mix everything very well until the chicken pieces are completely coated with the seasoning mixture.

3. Fry the Chicken

Heat enough oil for deep frying over medium-high heat.

Carefully place the chicken pieces into the hot oil. Fry for 8–10 minutes without moving or disturbing the chicken too much.

Cover the pan and continue cooking for another 10 minutes.

Remove the cover, carefully flip the chicken pieces, and cook for another 4–5 minutes, or until the chicken is golden, crispy, and completely cooked through.

Transfer the chicken to a serving plate, sprinkle with chaat masala, drizzle with fresh lemon juice, and serve hot with French fries, rice, or warm roti.
