Ingredients
Cream Cheese Swirl
4 oz 115 g cream cheese, softened
¼ cup 50 g granulated sugar
1 large egg yolk
½ tsp vanilla extract
Banana Bread Batter
1 ½ cups 190 g all-purpose flour
1 tsp baking soda
½ tsp salt
½ tsp ground cinnamon optional
½ cup 115 g unsalted butter, melted and slightly cooled
¾ cup 150 g light brown sugar, packed
2 large ripe bananas mashed (about ¾ cup / 180 g)
2 large eggs
1 tsp vanilla extract
¼ cup 60 ml milk or plain yogurt
Instructions
Preheat the oven to 350°F (175°C).
Line or lightly grease a standard 9×5-inch loaf pan.
Make the cream cheese layer.
In a small bowl, mix the cream cheese and granulated sugar until smooth.
Stir in the egg yolk and vanilla. Set aside.
Prepare the dry ingredients.
In a medium bowl, whisk together the flour, baking soda, salt, and cinnamon.
Mix the wet ingredients.
In a large bowl, whisk the melted butter and brown sugar until combined.
Add the mashed bananas, eggs, vanilla, and milk. Mix until smooth.
Combine.
Gently fold the dry ingredients into the banana mixture just until no dry streaks remain. Do not overmix.
Layer the batter.
Pour half of the banana batter into the prepared pan.
Spoon the cream cheese mixture evenly over the batter.
Top with the remaining banana batter.
Create a light swirl.
Use a knife to gently swirl the layers once or twice.
Bake for 55–65 minutes, or until a toothpick inserted into the center comes out mostly clean (a little cream cheese on the tester is fine).
Cool.
Let the bread cool in the pan for 15 minutes, then transfer to a rack to cool completely before slicing.
