Cracker Barrel Meatloaf

Ingredients:
2 lbs ground beef
1 cup diced onion
1/2 cup diced bell pepper
2 large eggs, beaten
1 1/2 cups milk
1 sleeve Ritz crackers, crushed (about 34 crackers)
1/2 cup ketchup
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon garlic powder
For the Topping:
1/2 cup ketchup
2 tablespoons brown sugar
1 teaspoon mustard
Instructions:
Preheat your oven to 350°F (175°C).
In a large bowl, combine the ground beef, onion, bell pepper, eggs, milk, crushed crackers, 1/2 cup ketchup, salt, black pepper, and garlic powder. Mix until well combined.
Press the meat mixture into a loaf pan or shape it into a loaf on a baking sheet lined with parchment paper.
In a small bowl, mix together 1/2 cup ketchup, brown sugar, and mustard to make the topping. Spread this mixture over the top of the meatloaf.
Bake for 1 hour or until the meatloaf is cooked through and the topping is caramelized.
Let the meatloaf rest for 10 minutes before slicing and serving.
