Cottage Cheese & Yogurt Soufflé

Ingredients

(Serves 2):

2 dl cottage cheese
2 eggs
1 dl Greek yogurt (or quark)
6-7 drops vanilla stevia (or vanilla extract)
1-2 tsp sweetener (optional)

Instructions:

Start by preheating your oven to 200°C (about 400°F).
Next, add all the ingredients to a bowl or blender. Blend until smooth, ensuring everything is fully combined.
Divide the mixture evenly between two oven-safe bowls. Bake in the oven for 14-18 minutes. The soufflé should have golden edges, be set on the sides, and remain a little wobbly in the center. Be cautious not to overbake to avoid dryness.
Once done, remove from the oven and allow to cool slightly.
Top with your favorite fruits, berries, or jam for an extra burst of flavor!
