Ingredients
- ½ cup coconut flour
- 6 eggs (room temperature)
- ¼ cup butter (melted) or coconut oil
- 1 tsp baking powder
- ½ tsp salt
- ½ tsp apple cider vinegar
- ¼ cup warm water or unsweetened almond milk
- (Optional) 1 tbsp psyllium husk powder (more bread-like texture)
🔪 Method
- Preheat oven to 170°C / 340°F. Line a loaf pan.
- Whisk eggs, melted butter, and vinegar.
- Add coconut flour, baking powder, salt (and psyllium if using). Mix well.
- Slowly add warm water; batter will thicken.
- Pour into pan and smooth the top.
- Bake 40–45 minutes until firm and lightly golden.
- Cool completely, then slice.
💡 Tips
- Don’t add extra coconut flour (it absorbs a lot).
- Cooling fully helps it set properly.
- Toast slices for best texture.
