Chicken Skewers with Tzatziki
Ingredients
For the Chicken:
1.5 lbs chicken breast or thighs, cubed
3 tbsp olive oil
Juice of 1 lemon
3 cloves garlic, minced
1 tbsp dried oregano
1 tsp smoked paprika
Salt and black pepper to taste
For the Tzatziki Sauce:
1 cup Greek yogurt
1/2 cup English cucumber, grated and squeezed dry
1 tbsp fresh dill, chopped
1 clove garlic, minced
1 tbsp lemon juice
For Serving:
1/2 cup feta cheese, crumbled
Fresh parsley, chopped
Cooked rice or pita bread
Instructions
Marinate the Chicken: In a bowl, whisk olive oil, lemon juice, minced garlic, oregano, smoked paprika, salt, and pepper. Add the cubed chicken, tossing to coat evenly. Cover and refrigerate for at least 30 minutes. If using wooden skewers, soak them in water during this time.
Make the Tzatziki: In a medium bowl, combine the Greek yogurt, squeezed cucumber, fresh dill, minced garlic, and lemon juice. Season with a pinch of salt. Stir well and refrigerate until ready to plate.
Assemble and Cook: Thread the marinated chicken pieces tightly onto the skewers. Heat a grill pan or outdoor grill to medium-high heat. Lightly oil the grates. Grill the skewers for about 5 to 7 minutes per side, turning occasionally, until the chicken is beautifully charred and reaches an internal temperature of 165°F.
Plate and Serve: Spread a generous bed of tzatziki sauce onto a serving platter. Arrange the hot chicken skewers on top. Garnish heavily with crumbled feta cheese, chopped fresh parsley, and a drizzle of olive oil, capturing the presentation
