Chicken Fried Rice

Ingredients:

  • 2 cups cooked and cooled rice (leftover rice works best)
  • 1 boneless, skinless chicken breast, cut into small pieces
  • 2 eggs, beaten
  • 1 cup mixed vegetables (such as peas, carrots, and bell peppers)
  • 2 cloves garlic, minced
  • 2 tablespoons vegetable oil
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce (optional)
  • Salt and pepper to taste
  • Green onions, chopped, for garnish (optional)
  • Sesame oil (for added flavor, optional)

Instructions:

  1. Heat a large skillet or wok over medium-high heat and add 1 tablespoon of vegetable oil.
  2. Add the beaten eggs to the hot pan and scramble them. Once cooked, remove the scrambled eggs from the pan and set them aside.
  3. In the same pan, add the remaining tablespoon of vegetable oil and add the minced garlic. Stir-fry for a minute or until fragrant.
  4. Add the chicken pieces to the pan and cook until they are no longer pink and are cooked through. Season with salt and pepper.
  5. Add the mixed vegetables to the pan and stir-fry for a few minutes until they are tender.
  6. Add the cooked rice to the pan and stir-fry, breaking up any clumps, until it’s heated through and starts to turn slightly golden.
  7. Return the scrambled eggs to the pan and mix them in with the rice and other ingredients.
  8. Drizzle soy sauce and oyster sauce (if using) over the rice and toss everything together to ensure the flavors are well distributed.
  9. Taste and adjust the seasonings, adding more soy sauce or salt if needed.
  10. If desired, drizzle a few drops of sesame oil over the fried rice for extra flavor.
  11. Serve the chicken fried rice hot, garnished with chopped green onions if you like.
