Chicken Fried Rice

Ingredients:
- 2 cups cooked and cooled rice (leftover rice works best)
- 1 boneless, skinless chicken breast, cut into small pieces
- 2 eggs, beaten
- 1 cup mixed vegetables (such as peas, carrots, and bell peppers)
- 2 cloves garlic, minced
- 2 tablespoons vegetable oil
- 2 tablespoons soy sauce
- 1 tablespoon oyster sauce (optional)
- Salt and pepper to taste
- Green onions, chopped, for garnish (optional)
- Sesame oil (for added flavor, optional)
Instructions:
- Heat a large skillet or wok over medium-high heat and add 1 tablespoon of vegetable oil.
- Add the beaten eggs to the hot pan and scramble them. Once cooked, remove the scrambled eggs from the pan and set them aside.
- In the same pan, add the remaining tablespoon of vegetable oil and add the minced garlic. Stir-fry for a minute or until fragrant.
- Add the chicken pieces to the pan and cook until they are no longer pink and are cooked through. Season with salt and pepper.
- Add the mixed vegetables to the pan and stir-fry for a few minutes until they are tender.
- Add the cooked rice to the pan and stir-fry, breaking up any clumps, until it’s heated through and starts to turn slightly golden.
- Return the scrambled eggs to the pan and mix them in with the rice and other ingredients.
- Drizzle soy sauce and oyster sauce (if using) over the rice and toss everything together to ensure the flavors are well distributed.
- Taste and adjust the seasonings, adding more soy sauce or salt if needed.
- If desired, drizzle a few drops of sesame oil over the fried rice for extra flavor.
- Serve the chicken fried rice hot, garnished with chopped green onions if you like.
