Chicken Cabbage Stir fry

I love cooking with cabbage, it is full of fiber and really tastes good sauteed.

Plus, it keeps in the fridge real long making it an inexpensive veggie too. This stir fry has caramelized onions, red peppers and cabbage.

And is simmered in chicken stock along with a homemade tasty Chinese sauce and seasonings along with fresh chicken breasts. And don’t forget to serve with white rice! 

Ingredients

  • 1 tbsp Sesame oil
  • 1 medium Onion
  • 2 cloves Garlic
  • 1/2 head Green Cabbage
  • 2 Green onions, chopped
  • 2 Chicken Breasts
  • 1 Red Pepper, diced
  • 1 tsp black sesame seeds
  • Chinese sauce for stir fry
  • 1/2 cup of Chicken Stock
  • 2 tbsp of Oyster sauce
  • 1 tsp brown sugar
  • 1 tbsp of Soya sauce
  • 1/2 tsp pepper

Instructions

  1. Start by mixing all your Chinese sauce ingredients together in a bowl
  2. Toss in the chicken breasts and marinate together for a few mins before add the breasts to a large frying pan over medium heat.
  3. Add in 1 tbsp of sesame oil and simmer over medium heat on one side for 8 mins then flip over and do the same on the other.
  4. Remove from the heat and let the chicken sit on a cutting board till it cools down some and then slice.
  5. Meanwhile in the same pan, toss in the diced cabbage, onions and red pepper and sauté with the remaining Chinese sauce from the chicken and saute till soft.
  6. Turn down the heat and add the minced garlic and sauté one minute before adding in the chopped pepper.
  7. Toss back in the cooked chicken, extra soya or oyster sauce according to your taste preference and sauté on low – medium heat all together for 15 minutes, string often.
  8. Stir in black sesame seeds
  9. Serve and enjoy!
