Chicken Bubble Biscuit Bake Casserole

Ingredients:

For the Keto Biscuits:

  • 1 ½ cups almond flour
  • 1 tablespoon baking powder
  • ¼ teaspoon garlic powder
  • 1 ½ cups shredded mozzarella cheese
  • 2 oz cream cheese, softened
  • 1 egg

For the Casserole Filling:

  • 2 cups cooked, shredded chicken
  • ½ cup sour cream
  • 4 oz cream cheese, softened
  • ½ cup shredded cheddar cheese
  • ¼ cup chicken broth
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions:

Step 1: Prepare the Keto Biscuits

  1. Preheat oven to 375°F (190°C).
  2. In a microwave-safe bowl, melt the mozzarella and cream cheese for 30-second intervals, stirring until smooth.
  3. In a separate bowl, mix almond flour, baking powder, and garlic powder. Add the melted cheese mixture and the egg.
  4. Knead the dough until fully combined. Form small dough balls (like mini biscuits). Set aside.

Step 2: Prepare the Casserole Filling

  1. In a large bowl, mix sour cream, softened cream cheese, cheddar cheese, chicken broth, and seasonings. Combine until smooth.
  2. Add shredded chicken to the mixture and stir until well-coated.

Step 3: Assemble the Casserole

  1. Grease a 9×13-inch baking dish. Spread the chicken filling evenly in the dish.
  2. Place the biscuit dough balls on top of the chicken filling. Space them out for even baking.
  3. Sprinkle extra shredded cheddar cheese on top if desired.

Step 4: Bake

  1. Bake for 25–30 minutes, or until the biscuits are golden brown and fully cooked.
  2. Let it rest for 5 minutes before serving.
