Chicken Bubble Biscuit Bake Casserole

Ingredients:
For the Keto Biscuits:
- 1 ½ cups almond flour
- 1 tablespoon baking powder
- ¼ teaspoon garlic powder
- 1 ½ cups shredded mozzarella cheese
- 2 oz cream cheese, softened
- 1 egg
For the Casserole Filling:
- 2 cups cooked, shredded chicken
- ½ cup sour cream
- 4 oz cream cheese, softened
- ½ cup shredded cheddar cheese
- ¼ cup chicken broth
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- ½ teaspoon Italian seasoning
- Salt and pepper to taste
Instructions:
Step 1: Prepare the Keto Biscuits
- Preheat oven to 375°F (190°C).
- In a microwave-safe bowl, melt the mozzarella and cream cheese for 30-second intervals, stirring until smooth.
- In a separate bowl, mix almond flour, baking powder, and garlic powder. Add the melted cheese mixture and the egg.
- Knead the dough until fully combined. Form small dough balls (like mini biscuits). Set aside.
Step 2: Prepare the Casserole Filling
- In a large bowl, mix sour cream, softened cream cheese, cheddar cheese, chicken broth, and seasonings. Combine until smooth.
- Add shredded chicken to the mixture and stir until well-coated.
Step 3: Assemble the Casserole
- Grease a 9×13-inch baking dish. Spread the chicken filling evenly in the dish.
- Place the biscuit dough balls on top of the chicken filling. Space them out for even baking.
- Sprinkle extra shredded cheddar cheese on top if desired.
Step 4: Bake
- Bake for 25–30 minutes, or until the biscuits are golden brown and fully cooked.
- Let it rest for 5 minutes before serving.
