Cherry Almond Baked Oatmeal

Cherry Almond Baked Oatmeal, extremely delicious and like a crossover of a Cherry Bakewell tart and Almond Fingers.

This recipe is gluten free, vegetarian, Slimming World and Weight Watchers friendly

  • Extra Easy – 1 HEb and 4 syns
  • Green/Vegetarian – 1 HEb and 4 syns
  • Original – 1 HEb and 4 syns
  • WW Smart Points – 5 (use plain fat free yoghurt)
  • Gluten Free – ensure the oats and baking powder are gluten free

About Time 

  • Prep Time  10 mins
  • Cook Time 40 mins
  • Total Time 50 mins

Ingredients

  • 40g (1.5oz)  of oats – 1 HEb
  • 60g of frozen dark cherries – 2 syns
  • ¼ tsp of almond extract
  • ½ tsp of baking powder
  • 100g (⅓ cup) of fat free vanilla or plain yoghurt
  • 2 tsp of of Sukrin Gold
  • ½ tbs of Sukrin:1  – 0.5 for both
  • 1 large egg
  • 5g of sliced almonds – 1.5 syns
  • spray oil

Instructions

  1. Preheat oven to 190c/375f
  2. Grease a small oven proof dish with spray oil
  3. Add to a bowl – the oats, Sukrin:1, ½ tsp of baking powder, yoghurt, almond extract and egg and whisk to combine
  4. Add the cherries to the oven dish and sprinkle with 1 tsp of Sukrin Gold
  5. Pour over the top with the oat mixture, sprinkle with the sliced almonds
  6. Sprinkle with the remaining Sukrin Gold
  7. Bake in the oven for 40 mins till set and lightly golden.
  8. Serve and enjoy!!

Notes

The amount of baking powder is negligible, so I therefore haven’t synned it.
