Cheesecake Fruit Salad
Ingredients
For the Cream Cheese Mixture:
8 oz cream cheese, softened
½ cup granulated sugar
1 teaspoon vanilla extract
1 cup cool whip (thawed) or whipped cream
For the Fruit Salad:
2 cups diced strawberries
2 cups sliced bananas
2 cups seedless grapes, halved
2 cups pineapple chunks (fresh or canned, drained)
1 cup blueberries
1 cup raspberries
Optional: 1 cup crushed graham crackers or vanilla wafers for texture
Instructions
Prepare the Cream Cheese Mixture:
In a large mixing bowl, beat the softened cream cheese and granulated sugar until smooth and creamy. Stir in the vanilla extract. Gently fold in the cool whip or whipped cream until well combined. Set aside.
Assemble the Fruit Salad:
In a separate large bowl, combine all the prepared fruits. Toss gently to mix them evenly without damaging the fruit.
Combine the Ingredients:
Pour the cream cheese mixture over the fruit salad and gently fold everything together until the fruits are evenly coated. Be careful not to overmix, as this will help maintain the fruit’s shape.
Chill Before Serving:
Cover the fruit salad and refrigerate for at least 1 hour to allow the flavors to meld together. If using crushed graham crackers or vanilla wafers, sprinkle them on top just before serving for added crunch.
Serve:
Scoop the chilled Cheesecake Fruit Salad into bowls or onto plates and enjoy! You can also garnish with additional whipped cream or a few extra berries for presentation.

Tips
Use your favorite combination of fruits—kiwis, peaches, or mangoes would also work beautifully.
To prevent bananas from browning, toss them with a little lemon juice before adding to the salad.
For a lighter version, substitute Greek yogurt for part of the cream cheese to reduce calories while maintaining creaminess.
This Cheesecake Fruit Salad is a perfect balance of creamy decadence and fruity freshness. It’s an easy way to impress guests or satisfy your own sweet tooth!
