Cabbage and Potato Curry

INGREDIEN

4 cups finely chopped cabbage
4 medium potatoes, diced
1 cup sliced onion
1 tbsp ginger and green chili paste
1 cup chopped tomato
½ cup frozen or fresh peas
3 tbsp mustard oil
Salt to taste
½ tsp turmeric powder
1 tsp cumin powder
1 tsp garam masala powder
1 tsp red chili powder
½ tsp cumin seeds
½ tsp mustard seeds
1 bay leaf
2-3 dashes asafoetida
⅓ cup water

Directions:

  1. Set Instant Pot to SAUTE; add oil and temper spices.
  2. Sauté onions until lightly golden.
  3. Add ginger-chili paste; cook out raw aroma.
  4. Add tomatoes, spices; cook thoroughly.
  5. Mix in potatoes; cook for 2 minutes.
  6. Add cabbage; combine well.
  7. Pour water and deglaze.
  8. Pressure cook on HIGH for 5 minutes.
  9. Release pressure; stir in peas.
  10. Simmer to thicken; garnish with cilantro
