BROCCOLI PASTA SALAD

BROCCOLI PASTA SALAD:

Ingredients

1 lb pasta, cooked to packaged instructions, and cooled

1 1/2 cups cherry tomatoes, halved

2 cups broccoli, small chop

1/2 red onion, small dice

1 cup, micro arugula

6 green onions, minced

1 lemon, juiced

2 cloves of garlic, minced

3 tablespoons vegan mayo

2 tablespoons avocado oil

4 teaspoons dijon mustard

Salt + pepper, to taste

Directions

Mustard Vinaigrette:

In a high-speed blender combine green onions, lemon juice, vegan mayo, avocado oil, dijon mustard, and S & P.

Mix until the vinaigrette has a smooth, creamy consistency.

Pasta Salad

Cook pasta according to directions.

When finished cooking, drain and set aside to cool.

Chop tomatoes, broccoli, red onion, mixing with pasta once it has cooled.

Combine 1 cup micro arugula with pasta salad.
