Broccoli Cheese Patties:

Ingredients:

  • 2 cups broccoli florets (steamed and chopped)
  • 1 cup shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup breadcrumbs (you can use gluten-free if needed)
  • 1/4 cup finely chopped onion
  • 2 cloves garlic, minced
  • 2 large eggs, beaten
  • 1/4 cup flour (any type you prefer)
  • Salt and pepper to taste
  • 1/4 teaspoon paprika (optional)
  • 2 tablespoons olive oil or vegetable oil for frying

Instructions:

  1. Prepare Broccoli: Steam the broccoli florets until they are tender, about 5-7 minutes. Let them cool, then chop them finely.
  2. Mix Ingredients: In a large bowl, combine the chopped broccoli, cheddar cheese, Parmesan cheese, breadcrumbs, onion, garlic, and beaten eggs. Mix well. Season with salt, pepper, and paprika if using.
  3. Form Patties: Shape the mixture into small patties, about 1/2 inch thick. If the mixture is too wet, you can add a little more flour or breadcrumbs to help bind it.
  4. Cook Patties: Heat the oil in a large skillet over medium heat. Cook the patties for about 3-4 minutes on each side, or until they are golden brown and crispy.
  5. Drain and Serve: Place the cooked patties on a paper towel-lined plate to drain excess oil. Serve warm.
