Breakfast Keto Sandwiches

Ingredients:

  • 2 large eggs
  • 2 slices of keto bread (store-bought or homemade)
  • 2 slices of cheese (cheddar, mozzarella, or your choice)
  • 1-2 slices of cooked bacon or sausage patty (optional)
  • 1 tablespoon of butter
  • Salt and pepper (to taste)
  • Avocado slices (optional)
  • Spinach or arugula (optional)
  • Tomato slices (optional)

Instructions:

  1. Prepare the Eggs:
    • Heat a non-stick skillet over medium heat. Add a little butter and let it melt.
    • Crack the eggs into the skillet, being careful not to break the yolks (unless you prefer scrambled).
    • Season with salt and pepper.
    • Cook to your liking, either sunny-side-up, over-easy, or scrambled.
  2. Toast the Bread:
    • While the eggs are cooking, toast your keto bread slices. You can do this in a toaster or on a separate pan, lightly buttered for extra flavor.
  3. Assemble the Sandwich:
    • Place one slice of cheese on top of the egg to melt slightly (optional).
    • On one slice of toasted keto bread, layer the cooked bacon or sausage patty (if using).
    • Place the cooked egg (with melted cheese) on top of the bacon or sausage.
    • Add avocado slices and a few greens (like spinach or arugula) for extra freshness.
  4. Top and Serve:
    • Place the second slice of keto bread on top.
    • Optionally, you can grill the sandwich for an extra crispy texture.
    • Serve immediately and enjoy your keto breakfast sandwich!

Tips:

  • Cheese variations: Feel free to use different types of cheese for variety, like Swiss, provolone, or pepper jack.
