Breakfast Keto Sandwiches

Ingredients:
- 2 large eggs
- 2 slices of keto bread (store-bought or homemade)
- 2 slices of cheese (cheddar, mozzarella, or your choice)
- 1-2 slices of cooked bacon or sausage patty (optional)
- 1 tablespoon of butter
- Salt and pepper (to taste)
- Avocado slices (optional)
- Spinach or arugula (optional)
- Tomato slices (optional)
Instructions:
- Prepare the Eggs:
- Heat a non-stick skillet over medium heat. Add a little butter and let it melt.
- Crack the eggs into the skillet, being careful not to break the yolks (unless you prefer scrambled).
- Season with salt and pepper.
- Cook to your liking, either sunny-side-up, over-easy, or scrambled.
- Toast the Bread:
- While the eggs are cooking, toast your keto bread slices. You can do this in a toaster or on a separate pan, lightly buttered for extra flavor.
- Assemble the Sandwich:
- Place one slice of cheese on top of the egg to melt slightly (optional).
- On one slice of toasted keto bread, layer the cooked bacon or sausage patty (if using).
- Place the cooked egg (with melted cheese) on top of the bacon or sausage.
- Add avocado slices and a few greens (like spinach or arugula) for extra freshness.
- Top and Serve:
- Place the second slice of keto bread on top.
- Optionally, you can grill the sandwich for an extra crispy texture.
- Serve immediately and enjoy your keto breakfast sandwich!
