Breakfast baked potatoes

Ingredients:

  • 2 large russet potatoes
  • 2 tbsp butter
  • 2 eggs
  • ½ cup shredded cheese (cheddar, mozzarella, or your choice)
  • 2 tbsp cooked and crumbled bacon (or turkey bacon)
  • 2 tbsp chopped green onions
  • Salt & pepper to taste

Instructions:

  1. Preheat Oven to 400°F (200°C).
  2. Prepare Potatoes: Wash and dry the potatoes, then poke holes with a fork. Bake directly on the oven rack for 45-50 minutes until soft.
  3. Cool & Scoop: Let the potatoes cool slightly, then slice them lengthwise. Gently scoop out some of the flesh to create a well.
  4. Fill with Goodness: Add butter, then crack an egg into each potato. Sprinkle with salt, pepper, cheese, and bacon.
  5. Bake Again: Return to the oven and bake for 12-15 minutes or until eggs are cooked to your liking.
  6. Garnish & Serve: Top with green onions and serve hot!
