Blueberry Yogurt Protein Bars

Ingredients:-

  • 2 cups old-fashioned oats
  • 1/2 cup vanilla protein powder (ensure it fits your dietary needs)
  • 1/4 cup almond flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsweetened applesauce
  • 1/4 cup honey or maple syrup (adjust according to sweetness preference)
  • 1/2 cup plain Greek yogurt
  • 1/2 cup fresh or frozen blueberries

Instructions:-

  1. Preheat your oven to 350°F (175°C). Line an 8×8-inch baking dish with parchment paper or lightly grease it.
  2. In a large bowl, mix together the oats, protein powder, almond flour, baking powder, and salt.
  3. In another bowl, whisk together the applesauce, honey/maple syrup, and Greek yogurt until well combined.
  4. Combine the wet and dry ingredients, stirring until fully mixed.
  5. Gently fold in the blueberries, being careful not to overmix to avoid smashing the berries.
  6. Pour the mixture into the prepared baking dish, spreading it evenly.
  7. Bake for 20-25 minutes or until the edges are golden brown and a toothpick inserted in the center comes out clean.
